INGREDIENTS

Salad

  • 1 boneless, skinless Quebec turkey or chicken breast half, grilled and sliced
  • 250 ml (1 cup) baby spinach
  • 250 ml (1 cup) quinoa, cooked
  • 1 avocado, sliced
  • 2 pineapple slices, grilled
  • ½ cucumber cut into quarters
  • ½ turnip or radish, sliced
  • 10 cherry tomatoes, halved
  • 75 ml (1/3 cup) blackberries

Cashew and lemon dressing

  • 125 ml (½ cup) cashew nuts
  • 190 ml (¾ cup) of water
  • 45 ml (3 Tbsp.) PEPPER EVOO
  • 45 ml (3 Tbsp.) lemon juice
  • 15 ml (1 Tbsp.) honey
  • 10 ml (2 tsp) garlic, minced
  • 1 ml (¼ tsp) salt
  • 1 ml (¼ tsp) pepper

DIRECTIONS

Salad

  1. In a medium bowl, place layers of cooked turkey or chicken, spinach, quinoa, avocado, pineapple, cucumber, turnip, tomatoes and blackberries. Drizzle with cashew and lemon vinaigrette.

Cashew and Lemon Dressing

  1. Blend all ingredients in a food processor or blender on high speed until smooth.

TIP

Just before serving, add a drizzle of ROASTED WALNUT BALSAMIC VINEGAR or PINEAPPLE BALSAMIC VINEGAR.
