INGREDIENTS
Orange Ginger Sauce
- 190 ml (3/4 cup) freshly squeezed orange juice
- 15 ml (1 Tbsp.) cornstarch
- 1 1/2-inch knob ginger root, finely grated
- 1/2 clove of finely grated garlic
- 30 ml (2 Tbsp.) hoisin sauce
- 15 ml (1Tbsp.) oyster sauce
- 15 ml (1 Tbsp.) Ponzu vinegar
- 10 ml (2 tsp) brown sugar
- 5 ml (1 tsp) orange zest, finely grated
Stir-Fry
- 1 Québec turkey breast, thinly sliced
- 15 ml (1 Tbsp.) TOASTED SESAME OIL | ORGANIC
- 1 ml (1/4 tsp) each salt and pepper
- 1 large shallot cut in half lengthwise and thinly sliced
- 1 1-inch knob fresh ginger, grated
- 2.5 ml (1/2 tsp) red pepper flakes (optional)
- 1 medium zucchini, diced
- 500 ml (2 cups) green beans, ends trimmed and coarsely chopped
- 500 ml (2 cups) loosely packed snow peas, end trimmed
- 1 large scallion, white and light green parts only (green tops saved for garnish), thinly sliced
- 1 handful of Les déracinés pea shoots
DIRECTIONS
Orange Ginger Sauce

Whisk orange juice and cornstarch together. Add remaining ingredients and whisk well. Set aside.
Stir-Fry
- Heat oil in a large skillet or wok over medium heat. Season turkey breast with salt and pepper and add to pan. Cook for 8 to 10 minutes until no pink remains.
- Add the shallot, ginger, red pepper flakes (if using), and zucchini to the skillet. Sauté for 5 minutes or until the zucchini is just starting to brown. Add the green beans and snow peas and sauté for 4 minutes or until bright green and tender crisp.
- Add Orange Ginger Sauce and toss until skillet mixture is coated and glossy. Adjust salt and pepper to taste. Spoon into bowls and top with scallions greens pea shoots, if using.
