- 120 ml of UMBRIA EVOO or MONTANTICO EVOO
- 60 ml BOURBON & MAPLE BALSAMIC VINEGAR or FIG BALSAMIC VINEGAR
- 1 French shallot (for garnish)
- 60 ml almonds
- 1 Tbsp. mustard
- 1 tsp.each cardamom and cinnamon
- 1 Tbsp. maple syrup/honey (optional)
- Salt and pepper
